Ingredients

Scale
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup roasted pumpkin seeds
  • 1 cup kale, chopped
  • 1/2 cup cranberries
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth, bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy.
  4. In a skillet, heat olive oil and sauté kale until wilted.
  5. In a large bowl, combine cooked quinoa, sautéed kale, cranberries, and feta cheese.
  6. Top with roasted pumpkin seeds and drizzle with maple syrup.
  7. Season with salt and pepper to taste.
