- 2 medium zucchinis, grated
- 1 cup corn kernels (fresh or frozen)
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 2 large eggs
- 1/4 cup green onions, chopped
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Oil for frying
Instructions
- Grate the zucchinis and place them in a clean kitchen towel to squeeze out excess moisture.
- In a large bowl, combine the grated zucchini, corn, flour, cornmeal, eggs, green onions, baking powder, salt, and pepper.
- Mix until well combined.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the skillet and flatten slightly.
- Cook for 3-4 minutes on each side or until golden brown.
- Remove from skillet and drain on paper towels.
- Serve warm with your favorite dipping sauce.
Notes
- For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
- These fritters can be stored in the refrigerator for up to 3 days.
- They can also be frozen for later use; just reheat in the oven before serving.
