  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Oil for frying

Instructions

  1. Grate the zucchinis and place them in a clean kitchen towel to squeeze out excess moisture.
  2. In a large bowl, combine the grated zucchini, corn, flour, cornmeal, eggs, green onions, baking powder, salt, and pepper.
  3. Mix until well combined.
  4. Heat oil in a skillet over medium heat.
  5. Drop spoonfuls of the mixture into the skillet and flatten slightly.
  6. Cook for 3-4 minutes on each side or until golden brown.
  7. Remove from skillet and drain on paper towels.
