Ingredients

  • Shrimp: 1 pound large shrimp, peeled and deveined
  • Marinade: 1/4 cup fresh lime juice, 2 tablespoons olive oil, 2 cloves garlic, minced, 1 teaspoon chili powder, 1/2 teaspoon salt
  • Coconut Rice: 1 cup jasmine rice, 1 can (13.5 oz) coconut milk, 1 cup water, 1 tablespoon sugar, 1/2 teaspoon salt
  • Toppings: 1/4 cup fresh cilantro, chopped, 1 avocado, sliced, lime wedges for serving

Instructions

  1. In a bowl, combine lime juice, olive oil, garlic, chili powder, and salt to create the marinade.
  2. Add the shrimp to the marinade, cover, and refrigerate for 30 minutes.
  3. In a saucepan, combine jasmine rice, coconut milk, water, sugar, and salt. Bring to a boil over medium heat.
  4. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and liquid is absorbed.
  5. While the rice cooks, heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they turn pink and opaque.
  6. Fluff the coconut rice with a fork and divide it into bowls.
  7. Top the rice with cooked shrimp, fresh cilantro, and avocado slices.
  8. Serve with lime wedges on the side for an extra zesty kick.

Notes

  • This dish can be made ahead by marinating the shrimp and cooking the rice a day in advance. Store separately in airtight containers in the refrigerator.
  • Leftover shrimp can be stored for up to 2 days in the fridge, while coconut rice can last up to 4 days.
  • For a spicier kick, add diced jalapeños to the marinade.
