Ingredients
- Shrimp: 1 pound large shrimp, peeled and deveined
- Marinade: 1/4 cup fresh lime juice, 2 tablespoons olive oil, 2 cloves garlic, minced, 1 teaspoon chili powder, 1/2 teaspoon salt
- Coconut Rice: 1 cup jasmine rice, 1 can (13.5 oz) coconut milk, 1 cup water, 1 tablespoon sugar, 1/2 teaspoon salt
- Toppings: 1/4 cup fresh cilantro, chopped, 1 avocado, sliced, lime wedges for serving
Instructions
- In a bowl, combine lime juice, olive oil, garlic, chili powder, and salt to create the marinade.
- Add the shrimp to the marinade, cover, and refrigerate for 30 minutes.
- In a saucepan, combine jasmine rice, coconut milk, water, sugar, and salt. Bring to a boil over medium heat.
- Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and liquid is absorbed.
- While the rice cooks, heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they turn pink and opaque.
- Fluff the coconut rice with a fork and divide it into bowls.
- Top the rice with cooked shrimp, fresh cilantro, and avocado slices.
- Serve with lime wedges on the side for an extra zesty kick.
Notes
- This dish can be made ahead by marinating the shrimp and cooking the rice a day in advance. Store separately in airtight containers in the refrigerator.
- Leftover shrimp can be stored for up to 2 days in the fridge, while coconut rice can last up to 4 days.
- For a spicier kick, add diced jalapeños to the marinade.
