- For the Chicken:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil

- For the Veggies:
- 1 cup bell peppers, diced (red, yellow, and green)
- 1 cup zucchini, sliced
- 1 cup broccoli florets
- 1/2 cup carrots, julienned
- For the Orzo:
- 1 cup orzo pasta
- 2 cups vegetable broth
Instructions
- In a bowl, combine lemon juice, olive oil, garlic, oregano, salt, and pepper. Add chicken pieces and marinate for at least 30 minutes.
- In a saucepan, bring vegetable broth to a boil. Add orzo and cook for 8-10 minutes until al dente. Drain and set aside.
- In a large skillet, heat a tablespoon of olive oil over medium-high heat. Add marinated chicken and cook for 5-7 minutes until golden brown and cooked through.
- Add the diced bell peppers, zucchini, broccoli, and carrots to the skillet. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
- Stir in the cooked orzo and mix well. Cook for an additional 2 minutes to heat through.
- Serve hot, garnished with lemon wedges and fresh herbs if desired.
