    • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

  • For the Veggies:
    • 1 cup bell peppers, diced (red, yellow, and green)

  • For the Orzo:

    • 2 cups vegetable broth

Instructions

  1. In a bowl, combine lemon juice, olive oil, garlic, oregano, salt, and pepper. Add chicken pieces and marinate for at least 30 minutes.
  2. In a saucepan, bring vegetable broth to a boil. Add orzo and cook for 8-10 minutes until al dente. Drain and set aside.
