- 2 large sweet potatoes
- 4 oz goat cheese
- 1/4 cup fresh sage leaves
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes.
- In a bowl, toss the sweet potatoes with olive oil, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
- In the last 5 minutes of roasting, add the fresh sage leaves to the baking sheet.
- Remove from the oven and let cool slightly.
- Top the roasted sweet potatoes with crumbled goat cheese before serving.

- For a creamier texture, you can mash the sweet potatoes before adding the goat cheese.
