A delicious and healthy pumpkin bake made with cottage cheese, perfect for fall and packed with flavor.
Ingredients

- 2 cups pumpkin puree
- 1 cup cottage cheese
- 1/2 cup sugar
- 1/2 cup flour
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the pumpkin puree and cottage cheese until smooth.
- Add in the sugar, flour, eggs, vanilla extract, baking powder, cinnamon, nutmeg, and salt. Mix until well combined.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes or until the top is set and a toothpick comes out clean.
- Let it cool for a few minutes before serving.
Notes
- Can be served warm or cold.
- Great with whipped cream or yogurt on top.
- Store leftovers in the refrigerator for up to 3 days.
