Ingredients

  • 2 cups pumpkin puree
  • 1 cup cottage cheese
  • 1/2 cup sugar
  • 1/2 cup flour
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the pumpkin puree and cottage cheese until smooth.
  3. Add in the sugar, flour, eggs, vanilla extract, baking powder, cinnamon, nutmeg, and salt. Mix until well combined.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 30-35 minutes or until the top is set and a toothpick comes out clean.
  6. Let it cool for a few minutes before serving.
