A nutritious and delicious quinoa casserole loaded with vegetables, perfect for a healthy meal.


Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup chopped bell peppers
  • 1 cup chopped zucchini
  • 1 cup chopped spinach
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the quinoa under cold water.
  3. In a pot, combine quinoa and vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes.
  4. In a large bowl, mix cooked quinoa, bell peppers, zucchini, spinach, black beans, corn, cumin, paprika, salt, and pepper.
  5. Transfer the mixture to a greased baking dish and top with cheese if using.
  6. Bake for 25-30 minutes until heated through and cheese is melted.
  7. Let it cool for a few minutes before serving.

Notes

  • Feel free to add any other vegetables you like.
  • This dish can be made ahead of time and reheated.
