- 1 pound fresh green beans, trimmed
- 8 ounces mushrooms, sliced
- 1 medium onion, chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 can (10.5 ounces) cream of mushroom soup
- 1 cup milk
- 1 teaspoon soy sauce
- 1 cup shredded cheddar cheese
- 1 cup breadcrumbs
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Bring salted water to a boil in a large pot and blanch the trimmed green beans for 5 minutes.
- Drain the green beans and set aside.
- Heat olive oil in a skillet over medium heat and sauté the chopped onions and sliced mushrooms for 5-7 minutes.
- Add the minced garlic and cook for another minute.
- Combine cream of mushroom soup, milk, and soy sauce in a mixing bowl.
- Stir in the sautéed vegetables and blanched green beans until well coated.
- Transfer the mixture to a greased baking dish and top with cheddar cheese and breadcrumbs.
- Bake for 25-30 minutes until bubbly and golden brown.
- Allow to cool slightly before serving.
