Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the ube puree and eggs to the mixture, and beat until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Chill the dough in the refrigerator for at least 30 minutes to firm up.
  7. Once chilled, scoop tablespoon-sized portions of dough and roll them into balls.
  8. Roll each ball in powdered sugar until fully coated, then place them on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
