- 4 large russet potatoes
- 1/2 cup butter
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Bake the russet potatoes on a baking sheet for about 1 hour or until tender.
- Once cooled, cut the potatoes in half and scoop out the insides into a bowl.
- Mash the potato insides with butter, sour cream, and half the shredded cheese until creamy.
- Stir in the crumbled bacon and green onions, adding salt and pepper to taste.
- Spoon the mixture back into the skins and top with the remaining cheese.
- Bake at 375°F (190°C) for about 15-20 minutes until cheese bubbles and tops are golden brown.
- Serve warm.
