Description

Ingredients

  • 4 large russet potatoes
  • 1/2 cup butter
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bake the russet potatoes on a baking sheet for about 1 hour or until tender.
  3. Once cooled, cut the potatoes in half and scoop out the insides into a bowl.
  4. Mash the potato insides with butter, sour cream, and half the shredded cheese until creamy.
  5. Stir in the crumbled bacon and green onions, adding salt and pepper to taste.
  6. Spoon the mixture back into the skins and top with the remaining cheese.
  7. Bake at 375°F (190°C) for about 15-20 minutes until cheese bubbles and tops are golden brown.
  8. Serve warm.
