Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, lime juice, and lime zest, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, salt, and shredded coconut.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared baking dish and spread evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool before cutting into bars and serving.

Notes

  • For a sweeter taste, you can add powdered sugar on top before serving.
  • These bars can be stored in an airtight container for up to a week.
  • Feel free to adjust the lime juice for more or less tartness.
