Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsweetened shredded coconut
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/4 cup fresh lime juice
- 1 tablespoon lime zest
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs, lime juice, and lime zest, mixing until well combined.
- In another bowl, whisk together the flour, baking powder, salt, and shredded coconut.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before cutting into bars and serving.
Notes
- For a sweeter taste, you can add powdered sugar on top before serving.
- These bars can be stored in an airtight container for up to a week.
- Feel free to adjust the lime juice for more or less tartness.
