  • Author: Laura

  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

Tomato Feta Baked Eggs are a delightful morning dish that combines the creaminess of feta cheese with the juicy burst of ripe tomatoes. The eggs are baked to perfection, resulting in a velvety texture that pairs beautifully with the tangy feta and the sweet, roasted tomatoes.

Ingredients

Scale
  • 4 large eggs
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, combine the halved cherry tomatoes, olive oil, oregano, salt, and pepper. Toss to coat.
  3. Bake the tomatoes in the preheated oven for 15 minutes, or until they are soft and slightly caramelized.
  4. Remove the dish from the oven and create four small wells in the tomato mixture.
  5. Crack an egg into each well and sprinkle the crumbled feta cheese on top.
  6. Return the dish to the oven and bake for an additional 10-12 minutes, or until the egg whites are set but the yolks are still runny.
  7. Garnish with fresh basil leaves before serving.

Notes

  • This dish can be made ahead by preparing the tomato mixture and storing it in the refrigerator for up to 2 days. Just add the eggs and feta before baking.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Substitute goat cheese for feta for a different flavor profile.
