Description

Thai Sweet Chili Chicken is a delightful fusion of crispy, golden-brown chicken coated in a luscious, sweet, and slightly spicy sauce. Each bite offers a satisfying crunch followed by a burst of flavor that dances on the palate, leaving a lingering warmth and sweetness that is utterly irresistible.

Ingredients

Scale
  • For the Chicken:
    • 1 lb chicken thighs, boneless and skinless, cut into bite-sized pieces
    • 1 cup all-purpose flour
    • 1/2 cup cornstarch
    • 1 tsp garlic powder
    • 1 tsp salt
    • 1/2 tsp black pepper
    • 1/2 cup cold water
    • Vegetable oil for frying
  • For the Sauce:
    • 1/2 cup Thai sweet chili sauce
    • 2 tbsp soy sauce
    • 1 tbsp rice vinegar
    • 1 tsp sesame oil
    • 1 clove garlic, minced
    • 1 tsp ginger, grated

Instructions

  1. In a large bowl, mix the flour, cornstarch, garlic powder, salt, and black pepper.
  2. Gradually add cold water to the dry ingredients, stirring until a smooth batter forms.
  3. Heat vegetable oil in a deep pan over medium-high heat (about 350°F).
  4. Dip each piece of chicken into the batter, allowing excess to drip off, then carefully place in the hot oil.
  5. Fry the chicken in batches for 5-7 minutes or until golden brown and cooked through, turning occasionally for even cooking.
  6. Remove the chicken and drain on paper towels.
  7. In a separate saucepan, combine the sweet chili sauce, soy sauce, rice vinegar, sesame oil, garlic, and ginger. Heat over low until warmed through.
  8. Toss the fried chicken in the sauce until evenly coated, then serve immediately.

Notes

  • This dish can be made ahead by frying the chicken and storing it in an airtight container in the refrigerator for up to 2 days. Reheat in the oven to maintain crispiness.
  • Store leftover sauce in the refrigerator for up to a week.
  • For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend and use tamari instead of soy sauce.
