Ingredients
Scale
- For the Chicken:
- 1 lb chicken thighs, boneless and skinless, cut into bite-sized pieces
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup cold water
- Vegetable oil for frying
- For the Sauce:
- 1/2 cup Thai sweet chili sauce
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 clove garlic, minced
- 1 tsp ginger, grated
Instructions
- In a large bowl, mix the flour, cornstarch, garlic powder, salt, and black pepper.
- Gradually add cold water to the dry ingredients, stirring until a smooth batter forms.
- Heat vegetable oil in a deep pan over medium-high heat (about 350°F).
- Dip each piece of chicken into the batter, allowing excess to drip off, then carefully place in the hot oil.
- Fry the chicken in batches for 5-7 minutes or until golden brown and cooked through, turning occasionally for even cooking.
- Remove the chicken and drain on paper towels.
- In a separate saucepan, combine the sweet chili sauce, soy sauce, rice vinegar, sesame oil, garlic, and ginger. Heat over low until warmed through.
- Toss the fried chicken in the sauce until evenly coated, then serve immediately.
Notes
- This dish can be made ahead by frying the chicken and storing it in an airtight container in the refrigerator for up to 2 days. Reheat in the oven to maintain crispiness.
- Store leftover sauce in the refrigerator for up to a week.
- For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend and use tamari instead of soy sauce.
