- Garnish:
- 1/4 cup additional Fruity Pebbles for topping
Instructions
- Rinse the sushi rice under cold water until the water runs clear, then combine with 1 1/4 cups of water in a rice cooker and cook according to the manufacturer’s instructions.
- Once cooked, let the rice cool to room temperature.
- In a mixing bowl, combine the softened cream cheese and powdered sugar until smooth and creamy.
- Lay a sheet of nori on a bamboo sushi mat, shiny side down.
- Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
- Spread a line of the cream cheese mixture across the center of the rice, then sprinkle with Fruity Pebbles.
- Using the mat, carefully roll the sushi away from you, pressing gently to form a tight roll.
- Seal the edge of the nori with a little water, then slice the roll into 6-8 pieces using a sharp knife.
- Sprinkle additional Fruity Pebbles on top of the sushi pieces for garnish.
