Ingredients

Scale
  • Rice:
    • 1 cup sushi rice
    • 1 1/4 cups water
  • Filling:
    • 1/2 cup cream cheese, softened
    • 1/4 cup powdered sugar
    • 1/2 cup Fruity Pebbles cereal
  • Wrap:
    • 4 sheets of nori (seaweed)
  • Garnish:
    • 1/4 cup additional Fruity Pebbles for topping

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear, then combine with 1 1/4 cups of water in a rice cooker and cook according to the manufacturer’s instructions.
  2. Once cooked, let the rice cool to room temperature.
  3. In a mixing bowl, combine the softened cream cheese and powdered sugar until smooth and creamy.
  4. Lay a sheet of nori on a bamboo sushi mat, shiny side down.
  5. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
  6. Spread a line of the cream cheese mixture across the center of the rice, then sprinkle with Fruity Pebbles.
  7. Using the mat, carefully roll the sushi away from you, pressing gently to form a tight roll.
  8. Seal the edge of the nori with a little water, then slice the roll into 6-8 pieces using a sharp knife.
  9. Sprinkle additional Fruity Pebbles on top of the sushi pieces for garnish.
