- 4 large poblano peppers
- 1 lb ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup shredded cheese
- 1 packet taco seasoning
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the poblano peppers and remove the seeds.
- In a skillet, cook the ground meat until browned, then drain excess fat.
- Add black beans, corn, taco seasoning, diced tomatoes, salt, and pepper to the skillet. Stir to combine.
- Stuff each poblano pepper with the meat mixture.
- Place the stuffed peppers in a baking dish and sprinkle cheese on top.
- Bake in the preheated oven for 25-30 minutes, until the peppers are tender and the cheese is melted.
- Garnish with chopped cilantro before serving.
Notes
- For a vegetarian option, substitute ground meat with lentils or quinoa.
- Feel free to add your favorite toppings like sour cream or avocado.
