Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 2 cups fresh spinach, chopped
  • 6 large eggs
  • 1/2 cup milk
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and add the diced sweet potatoes. Cook until tender, about 10-15 minutes.
  3. Add the chopped spinach to the skillet and cook until wilted.
  4. In a bowl, whisk together the eggs, milk, salt, and pepper.
  5. Stir in the cooked sweet potatoes and spinach, then add the crumbled feta cheese.
  6. Pour the mixture into a greased baking dish.
  7. Bake in the preheated oven for 25-30 minutes, or until the frittata is set and lightly golden on top.
  8. Let it cool slightly before slicing and serving.
