- 2 medium sweet potatoes, peeled and diced
- 2 cups fresh spinach, chopped
- 6 large eggs
- 1/2 cup milk
- 1/2 cup feta cheese, crumbled
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and add the diced sweet potatoes. Cook until tender, about 10-15 minutes.
- Add the chopped spinach to the skillet and cook until wilted.
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Stir in the cooked sweet potatoes and spinach, then add the crumbled feta cheese.
- Pour the mixture into a greased baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the frittata is set and lightly golden on top.
- Let it cool slightly before slicing and serving.
