Ingredients

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 cup green peas
  • 1 cup corn
  • 1 pound ground meat (beef, lamb, or turkey)
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1/2 cup vegetable broth
  • 1/4 cup milk (or plant-based milk)
  • 2 tablespoons butter (or vegan butter)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and chop the sweet potatoes, then boil them in salted water until tender.
  3. In a large skillet, heat olive oil over medium heat and sauté the onion, carrots, and celery until softened.
  4. Add garlic and cook for an additional minute.
  5. Stir in the ground meat and cook until browned.
  6. Add tomato paste, thyme, rosemary, salt, pepper, peas, corn, and vegetable broth. Simmer for 10 minutes.
  7. Drain the sweet potatoes and mash them with milk and butter until smooth.
  8. Spread the meat and vegetable mixture in a baking dish and top with the mashed sweet potatoes.
  9. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
  10. Let it cool for a few minutes before serving.

  • For a vegetarian version, substitute ground meat with lentils or mushrooms.
  • Feel free to add other vegetables like bell peppers or zucchini.
