- 2 large sweet potatoes
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 cup green peas
- 1 cup corn
- 1 pound ground meat (beef, lamb, or turkey)
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1/2 cup vegetable broth
- 1/4 cup milk (or plant-based milk)
- 2 tablespoons butter (or vegan butter)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and chop the sweet potatoes, then boil them in salted water until tender.
- In a large skillet, heat olive oil over medium heat and sauté the onion, carrots, and celery until softened.
- Add garlic and cook for an additional minute.
- Stir in the ground meat and cook until browned.
- Add tomato paste, thyme, rosemary, salt, pepper, peas, corn, and vegetable broth. Simmer for 10 minutes.
- Drain the sweet potatoes and mash them with milk and butter until smooth.
- Spread the meat and vegetable mixture in a baking dish and top with the mashed sweet potatoes.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
- Let it cool for a few minutes before serving.
Notes
- For a vegetarian version, substitute ground meat with lentils or mushrooms.
- Feel free to add other vegetables like bell peppers or zucchini.
- This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
