- 4 whole wheat tortillas

Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced sweet potatoes with olive oil, cumin, paprika, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
- In a bowl, whisk together the eggs and milk, then scramble in a pan over medium heat until cooked through.
- Warm the tortillas in a skillet or microwave.
- Assemble the burritos by placing sweet potatoes, scrambled eggs, and cheese in the center of each tortilla.
- Roll up the tortillas tightly and serve with fresh cilantro if desired.
