  • 4 whole wheat tortillas

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with olive oil, cumin, paprika, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. In a bowl, whisk together the eggs and milk, then scramble in a pan over medium heat until cooked through.
