Description

Savor the Flavor with Sweet Jalapeno Pork is a tantalizing dish that combines the succulent juiciness of slow-cooked pork with a sweet and spicy glaze. Each bite offers a delightful contrast of tender meat and a sticky, flavorful sauce that dances on the palate, leaving a lingering warmth from the jalapenos.

Ingredients

  • Pork: 2 pounds of pork shoulder, trimmed and cut into 2-inch cubes
  • Marinade: 1/2 cup of brown sugar, 1/4 cup of soy sauce, 1/4 cup of apple cider vinegar, 2 tablespoons of minced garlic, 1 tablespoon of minced fresh ginger
  • Jalapenos: 2 fresh jalapenos, finely chopped (seeds removed for less heat)
  • Seasoning: 1 teaspoon of smoked paprika, 1 teaspoon of black pepper, 1 teaspoon of salt

Instructions

  1. In a large bowl, combine the brown sugar, soy sauce, apple cider vinegar, garlic, ginger, smoked paprika, black pepper, and salt to create the marinade.
  2. Add the pork cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat your oven to 300°F (150°C).
  4. Transfer the marinated pork to a large baking dish and sprinkle the chopped jalapenos over the top.
  5. Cover the dish tightly with aluminum foil and bake for 3 hours, or until the pork is fork-tender.
  6. Remove the foil and increase the oven temperature to 400°F (200°C). Bake for an additional 30 minutes to caramelize the glaze.
  7. Let the pork rest for 10 minutes before serving, allowing the juices to redistribute.

Notes

  • This dish can be made a day in advance; simply reheat in the oven at 350°F (175°C) for 20 minutes before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • For a spicier kick, leave some jalapeno seeds in the mix or add a pinch of cayenne pepper.
