Instructions
- In a bowl, mix the ricotta cheese, sun-dried tomatoes, spinach, salt, and pepper until well combined.
- Spread the mixture evenly on two slices of bread.
- Top with shredded mozzarella cheese and cover with the remaining slices of bread.
- Heat olive oil in a skillet over medium heat.
- Place the sandwiches in the skillet and cook until golden brown, about 3-4 minutes per side.
- Remove from heat, slice, and serve warm.
