  • 2 cups fresh peaches, sliced
  • 1 cup mixed summer berries (strawberries, blueberries, raspberries)
  • ½ cup sour cream
  • ¼ cup powdered sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese, sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Fold in sliced peaches and mixed berries gently.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake for 50-60 minutes or until the center is set.
  8. Let it cool, then refrigerate for at least 4 hours before serving.
  9. For the topping, mix sour cream and powdered sugar, then spread over the chilled cheesecake.
  10. Garnish with additional berries before serving.
