- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 2 cups fresh peaches, sliced
- 1 cup mixed summer berries (strawberries, blueberries, raspberries)
- ½ cup sour cream
- ¼ cup powdered sugar
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Fold in sliced peaches and mixed berries gently.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set.
- Let it cool, then refrigerate for at least 4 hours before serving.
- For the topping, mix sour cream and powdered sugar, then spread over the chilled cheesecake.
- Garnish with additional berries before serving.
Notes
- For a gluten-free version, use gluten-free graham crackers.
- Make sure the cream cheese is at room temperature for a smoother batter.
