Ingredients

  • Salmon Fillets: 2 (6 oz each, skinless)
  • Cream Cheese: 4 oz (softened)
  • Dill: 2 tbsp (fresh, chopped)
  • Garlic Powder: 1 tsp
  • Lemon Juice: 1 tbsp
  • Salt: 1/2 tsp
  • Pepper: 1/4 tsp
  • Spinach: 1 cup (fresh, chopped)
  • Olive Oil: 1 tbsp (for cooking)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the softened cream cheese, dill, garlic powder, lemon juice, salt, and pepper until smooth.
  3. Lay the salmon fillets flat on a cutting board and spread the cream cheese mixture evenly over each fillet.
  4. Sprinkle the chopped spinach over the cream cheese layer.
  5. Carefully roll each salmon fillet tightly from one end to the other.
  6. Secure the rolls with toothpicks and place them seam-side down in a greased baking dish.
  7. Drizzle olive oil over the top of the pinwheels.
