  • For the Egg Shells:
    • 2 cups white chocolate chips
    • 1 tablespoon coconut oil
  • For the Filling:
    • 1 cup heavy whipping cream
    • 1/2 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 1 cup fresh strawberries, diced

Instructions

  1. In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Heat in 30-second intervals, stirring in between, until melted and smooth (about 1-2 minutes).
  2. Using a spoon, coat the inside of silicone egg molds with the melted chocolate, ensuring an even layer. Refrigerate for 10 minutes to set.
  3. Once set, apply a second layer of chocolate and refrigerate again for 10 minutes.
  4. In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
  5. Gently fold in the diced strawberries into the whipped cream mixture.
  6. Carefully remove the chocolate egg shells from the molds and fill each with the strawberry cream mixture.
  7. Seal the tops with any remaining melted chocolate and refrigerate for at least 30 minutes to set.
  8. Once set, carefully remove the egg bombs from the molds and serve chilled.
