Instructions
- In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Heat in 30-second intervals, stirring in between, until melted and smooth (about 1-2 minutes).
- Using a spoon, coat the inside of silicone egg molds with the melted chocolate, ensuring an even layer. Refrigerate for 10 minutes to set.
- Once set, apply a second layer of chocolate and refrigerate again for 10 minutes.
- In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
- Gently fold in the diced strawberries into the whipped cream mixture.
- Carefully remove the chocolate egg shells from the molds and fill each with the strawberry cream mixture.
- Seal the tops with any remaining melted chocolate and refrigerate for at least 30 minutes to set.
- Once set, carefully remove the egg bombs from the molds and serve chilled.
