Ingredients
- Strawberries: 2 cups, hulled and chopped
- Honey: 1 cup
- Jalapeños: 2, finely chopped (seeds removed for less heat)
- Fresh Lemon Juice: 1/4 cup
- Granulated Sugar: 1/2 cup
- Pectin: 1 package (1.75 oz)
Instructions
- In a large pot, combine the chopped strawberries, honey, jalapeños, and lemon juice. Cook over medium heat until the mixture begins to bubble, about 5 minutes.
- Add the granulated sugar and pectin, stirring constantly until fully dissolved, about 2 minutes.
- Increase the heat to high and bring the mixture to a rolling boil. Boil for 1 minute, stirring frequently.
- Remove from heat and skim off any foam that forms on the surface.
- Pour the jam into sterilized jars, leaving 1/4 inch headspace. Seal with lids.
- Process the jars in a boiling water bath for 10 minutes to ensure preservation.
Notes
- This jam can be made ahead and stored in the refrigerator for up to 3 weeks.
- For longer storage, process in a water bath as instructed.
- Substitute agave syrup for honey for a vegan option.
