- 1 cup fresh strawberries, pureed
- Crunch Topping:
- 1 cup crushed freeze-dried strawberries
- 1 cup Rice Krispies cereal
- ¼ cup white chocolate chips, melted
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a greased 9×9 inch baking pan.
- In a large mixing bowl, beat the softened cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract and strawberry puree until fully combined.
- Pour the cheesecake filling over the crust and spread evenly.
- Bake for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
- Remove from the oven and let cool completely at room temperature, then refrigerate for at least 4 hours.
- For the crunch topping, mix crushed freeze-dried strawberries, Rice Krispies, and melted white chocolate until well combined. Sprinkle over the chilled cheesecake before serving.
