These Strawberry Cheesecake Protein Balls are a delightful fusion of creamy cheesecake flavor and the sweetness of fresh strawberries. Each bite offers a smooth, velvety texture that melts in your mouth, complemented by a hint of graham cracker crunch that brings the classic dessert to life.

Ingredients

Scale
  • For the Protein Balls:
    • 1 cup rolled oats
    • 1/2 cup vanilla protein powder
    • 1/2 cup almond butter
    • 1/4 cup honey or maple syrup
    • 1/2 cup diced fresh strawberries
    • 1/4 cup crushed graham crackers
    • 1 teaspoon vanilla extract
  • For the Coating:
    • 1/4 cup white chocolate chips (optional)
    • 1 tablespoon coconut oil (optional)

Instructions

  1. In a large mixing bowl, combine rolled oats, protein powder, almond butter, honey, diced strawberries, crushed graham crackers, and vanilla extract.
  2. Mix until all ingredients are well combined and a sticky dough forms.
  3. Refrigerate the mixture for 30 minutes to firm up.
  4. Once chilled, scoop out tablespoon-sized portions and roll them into balls.
  5. If using, melt white chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals until smooth.
  6. Dip each protein ball into the melted chocolate, allowing excess to drip off, and place on a parchment-lined tray.
  7. Refrigerate again for 15 minutes to set the chocolate coating.
  8. Store in an airtight container in the fridge for up to one week.
