  • For the Chicken:
    • 1 lb boneless, skinless chicken thighs, diced
    • 2 tablespoons soy sauce
    • 1 tablespoon cornstarch
  • For the Fried Rice:
    • 3 cups cooked jasmine rice (preferably day-old)
    • 1 cup mixed vegetables (peas, carrots, corn)
    • 2 eggs, beaten
    • 3 green onions, chopped
    • 2 tablespoons vegetable oil
  • For the Teriyaki Sauce:
    • 1/2 cup soy sauce
    • 1/4 cup brown sugar
    • 2 tablespoons rice vinegar
    • 1 tablespoon sesame oil
    • 1 teaspoon garlic, minced
    • 1 teaspoon ginger, minced

Instructions

  1. In a bowl, marinate the diced chicken thighs with soy sauce and cornstarch for 15 minutes.
  2. In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add the remaining tablespoon of oil. Add the mixed vegetables and sauté for 3-4 minutes until tender.
  4. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix with the vegetables.
  5. Add the cooked rice to the skillet, breaking up any clumps, and stir to combine with the vegetables and eggs.
  6. In a small bowl, whisk together the teriyaki sauce ingredients. Pour the sauce over the rice mixture and stir well to coat everything evenly.
  7. Return the cooked chicken to the skillet and mix until heated through, about 2-3 minutes.
  8. Garnish with chopped green onions before serving.

Notes

  • This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
  • To reheat, simply warm in a skillet over medium heat until heated through.
  • For a vegetarian option, substitute chicken with tofu and use vegetable broth instead of chicken broth.
