Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with a silicone mat or parchment paper.
  2. In a bowl, sift together almond flour and powdered sugar to remove any lumps.
  3. In a separate bowl, whisk egg whites until foamy, then gradually add granulated sugar until stiff peaks form.
  4. Gently fold the almond flour mixture into the egg whites until fully combined, being careful not to deflate the mixture.
  5. Divide the batter into three bowls and color one blue, one yellow, and leave one black. Use gel food coloring for vibrant colors.
  6. Transfer each colored batter into separate pastry bags.
  7. Pipe small circles onto the prepared baking sheet, alternating colors to create a starry night effect.
  8. Let the macarons sit at room temperature for 30-60 minutes until a skin forms on the surface.
  9. Bake for 15-20 minutes, then let cool completely before removing from the baking sheet.
  10. For the filling, beat butter, powdered sugar, and vanilla extract until smooth. Pipe onto half of the macarons and sandwich with the other half.
