- For the Salmon Mixture:
- 1 lb fresh salmon fillet, skin removed
- 1/2 cup mayonnaise
- 2 tablespoons sriracha sauce
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 green onion, finely chopped
- For the Rice:
- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- For Topping:
- 1 cup panko breadcrumbs
- 2 tablespoons melted butter
- 1 tablespoon furikake seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the sushi rice under cold water until the water runs clear, then combine with 2 1/2 cups of water in a rice cooker and cook according to the manufacturer’s instructions.
- In a small saucepan, heat rice vinegar, sugar, and salt over low heat until dissolved. Once the rice is cooked, mix this vinegar mixture into the rice and let it cool.
- While the rice cools, prepare the salmon mixture by flaking the salmon into a bowl and combining it with mayonnaise, sriracha, soy sauce, sesame oil, and green onion until well mixed.
- In a separate bowl, combine panko breadcrumbs with melted butter and furikake seasoning.
- In a baking dish, spread the sushi rice evenly on the bottom, then layer the salmon mixture on top.
- Sprinkle the panko mixture over the salmon layer and bake for 20-25 minutes, or until the top is golden brown and crispy.
- Remove from the oven and let it cool for a few minutes before serving.

- This dish can be made ahead of time; prepare the salmon mixture and rice, then assemble and bake just before serving.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For a lighter version, substitute Greek yogurt for mayonnaise.
