Ingredients

  • 1 cup mashed sweet potatoes
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons maple syrup
  • Butter or oil for cooking

Instructions

  1. In a large bowl, combine the mashed sweet potatoes, flour, baking powder, cinnamon, nutmeg, and salt.
  2. In another bowl, whisk together the milk, egg, and maple syrup.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Heat a skillet over medium heat and add butter or oil.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm with additional maple syrup drizzled on top.

Notes

  • For a vegan option, substitute milk with almond milk and egg with a flax egg.
