Description

Delicious and nutritious spiced pumpkin and oatmeal breakfast bars perfect for a quick breakfast or snack.


Ingredients

  • 1 cup pumpkin puree
  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large bowl, mix together the pumpkin puree, almond butter, and honey or maple syrup until smooth.
  3. Add the rolled oats, cinnamon, nutmeg, ginger, and salt to the mixture and stir until well combined.
  4. If using, fold in the chopped nuts.
  5. Spread the mixture evenly in the prepared baking dish.
  6. Bake for 25-30 minutes or until the edges are golden brown.
  7. Allow to cool before cutting into bars.
