Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Place the squash halves cut-side down on a baking sheet and roast for 30-40 minutes until tender.
- In a bowl, mix ricotta cheese, egg, Italian seasoning, salt, and pepper.
- Once the squash is cooked, scrape the flesh with a fork to create spaghetti-like strands.
- In a muffin tin, layer the spaghetti squash strands, ricotta mixture, marinara sauce, and mozzarella cheese.
- Repeat the layers until the cups are filled.
- Top with grated Parmesan cheese.
- Bake for an additional 15-20 minutes until the cheese is bubbly and golden.
- Let cool slightly before serving.
