Ingredients

  • Chicken: 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • Rice: 1 cup long-grain white rice, rinsed
  • Ranch Seasoning: 1 packet (1 oz) ranch dressing mix
  • Broth: 2 cups low-sodium chicken broth
  • Vegetables: 1 cup frozen corn, 1 cup black beans (drained and rinsed), 1 red bell pepper (diced)
  • Cheese: 1 cup shredded cheddar cheese
  • Spices: 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp paprika, salt and pepper to taste

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Add the chicken pieces and season with salt, pepper, garlic powder, onion powder, and paprika. Cook until browned, about 5-7 minutes.
  3. Stir in the diced bell pepper, corn, and black beans, cooking for an additional 3 minutes.

  5. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
