Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Add the diced chicken and season with salt, pepper, chili powder, and cumin. Cook for 5-7 minutes until the chicken is browned and cooked through.
  3. Stir in the diced onion and bell pepper, cooking for an additional 3-4 minutes until softened.
  4. Add the quinoa, corn, black beans, and chicken broth to the skillet. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and liquid is absorbed.
  5. Stir in the heavy cream and cook for another 2-3 minutes until heated through.
