Ingredients

  • Chicken: 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • Rice: 1 cup long-grain white rice, rinsed
  • Vegetables: 1 medium onion, diced; 2 cloves garlic, minced; 1 red bell pepper, diced; 1 cup frozen peas
  • Spices: 2 tsp smoked paprika; 1 tsp cumin; 1/2 tsp cayenne pepper; salt and pepper to taste
  • Liquids: 4 cups chicken broth; 1 tbsp olive oil

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat until shimmering.
  2. Add the diced onion and bell pepper, sautéing for 3-4 minutes until softened.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Add the chicken pieces to the skillet, seasoning with smoked paprika, cumin, cayenne, salt, and pepper. Cook for 5-7 minutes until the chicken is browned on all sides.

  8. Remove from heat and let it sit, covered, for 5 minutes before serving.
