  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season the beef chuck roast with salt and pepper, then sear it in the skillet until browned on all sides.
  3. Transfer the roast to the slow cooker.
  4. Add chopped onion, minced garlic, sliced carrots, and diced potatoes around the roast.
  5. Pour beef broth and Worcestershire sauce over the ingredients in the slow cooker.
  6. Sprinkle dried thyme and rosemary on top.
  7. Cover and cook on low for 8 hours or high for 4 hours, until the meat is tender.
  8. Serve hot and enjoy!
