Description

A delicious and easy slow cooker recipe featuring tender chicken and flavorful potatoes, all infused with garlic and Parmesan cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. In a bowl, mix together the Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper.
  2. Place the halved baby potatoes in the bottom of the slow cooker.
  3. Season the chicken breasts with salt and pepper, then place them on top of the potatoes.
  4. Pour the chicken broth over the chicken and potatoes.
  5. Sprinkle the Parmesan garlic mixture over the chicken.
  6. Drizzle olive oil on top.
  7. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  8. Garnish with fresh parsley before serving.

  • For extra flavor, marinate the chicken in the garlic and Parmesan mixture for a few hours before cooking.
  • Feel free to add vegetables like carrots or green beans for a complete meal.
