Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown the beef pieces on all sides.
  2. Transfer the browned beef to the slow cooker.
  3. Add the chopped onion, garlic, carrots, and potatoes to the slow cooker.
  4. In a bowl, mix the beef broth, tomato paste, thyme, rosemary, salt, and pepper. Pour over the beef and vegetables.
  5. Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.
  6. Adjust seasoning if necessary before serving.

Notes

  • For a thicker stew, you can add a cornstarch slurry in the last hour of cooking.
