Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown the beef chunks on all sides.
  2. Transfer the browned beef to the slow cooker.
  3. Add the carrots, potatoes, onion, garlic, beef broth, tomato paste, thyme, rosemary, salt, and pepper to the slow cooker.
  4. Stir to combine all ingredients.
  5. Cover and cook on low for 8 hours or on high for 4 hours.
  6. Once cooked, taste and adjust seasoning if necessary before serving.

Notes

  • For a thicker stew, you can mix 2 tablespoons of cornstarch with 2 tablespoons of water and stir it into the stew during the last 30 minutes of cooking.
  • Feel free to add other vegetables like peas or green beans for extra flavor and nutrition.
