A refreshing and flavorful seafood pasta salad perfect for summer gatherings.
Ingredients

- 8 oz pasta (fusilli or penne)
- 1 cup cooked shrimp, peeled and deveined
- 1 cup cooked crab meat
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooled pasta, shrimp, crab meat, cherry tomatoes, red onion, bell pepper, and parsley.
- In a separate bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add other seafood like scallops or mussels.
- For a spicier kick, add some red pepper flakes.
- This salad can be made a day in advance for better flavor.
