- 4 large sweet potatoes
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1 cup potato chips
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and cube sweet potatoes into roughly equal pieces.
- Boil the sweet potatoes in a large pot of water for about 20 minutes until fork-tender.
- Drain the sweet potatoes well to remove excess moisture.
- Mash the drained sweet potatoes until smooth in a mixing bowl.
- Mix in butter, brown sugar, milk, vanilla extract, and cinnamon until everything is creamy and well-combined.
- Transfer the sweet potato mixture into a greased baking dish, spreading it evenly.
- Top with crushed potato chips.
- Bake for 25-30 minutes until heated through and top turns golden brown.
- Serve warm.
Notes
For added crunch, consider topping with chopped pecans or walnuts. This casserole can also be made ahead of time and baked just before serving.
