    • 1 lb ground beef

    • 2 cloves garlic, minced

  • For the Soup:
    • 8 cups beef broth
    • 1 can (14.5 oz) diced tomatoes
    • 1 medium onion, chopped
    • 2 carrots, sliced
    • 2 zucchinis, diced
    • 1 cup frozen corn
    • 1 tsp oregano
    • 1 tsp paprika
    • 1 bay leaf

Instructions

  1. In a large bowl, combine ground beef, cooked rice, parsley, egg, garlic, cumin, salt, and pepper. Mix well and form into 1-inch meatballs.
  2. In a large pot, heat the beef broth over medium heat until simmering.
  3. Add the diced tomatoes, onion, carrots, zucchinis, corn, oregano, paprika, and bay leaf to the pot. Stir to combine.
  4. Carefully add the meatballs to the simmering soup. Cook for 25-30 minutes, or until the meatballs are cooked through and the vegetables are tender.
  5. Remove the bay leaf before serving. Adjust seasoning with salt and pepper as needed.
