Ingredients

  • 1 pound Italian sausage
  • 1 apple, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the acorn squashes in half and scoop out the seeds.
  3. Drizzle the insides with olive oil, salt, and pepper, then place them cut-side down on a baking sheet.
  4. Bake the squashes for 25-30 minutes until tender.
  5. In a skillet, cook the Italian sausage over medium heat until browned.
  6. Add the chopped onion and garlic, cooking until the onion is translucent.
