- Olive oil for drizzling
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the acorn squashes in half and scoop out the seeds.
- Drizzle the insides with olive oil, salt, and pepper, then place them cut-side down on a baking sheet.
- Bake the squashes for 25-30 minutes until tender.
- In a skillet, cook the Italian sausage over medium heat until browned.
- Add the chopped onion and garlic, cooking until the onion is translucent.
- Stir in the diced apple, breadcrumbs, thyme, salt, and pepper, mixing well.
- Remove the squashes from the oven and fill each half with the sausage mixture.
- Top with grated Parmesan cheese.
- Return to the oven and bake for an additional 10-15 minutes until the cheese is melted and golden.
