Ingredients

  • Vegetables: 1 bell pepper, diced; 1 small onion, diced; 2 cups fresh spinach
  • Seasonings: 1 teaspoon garlic powder; 1 teaspoon paprika; salt and pepper to taste
  • Oil: 2 tablespoons olive oil
  • Eggs: 6 large eggs (optional for topping)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the diced potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
