    • 1 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 1 large egg
    • 1 teaspoon vanilla extract

    • 1 cup granulated sugar
    • 6 tablespoons unsalted butter
    • ½ cup heavy cream
    • 1 teaspoon sea salt

    • 1 teaspoon coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Spread the cookie dough evenly in the prepared baking pan and bake for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
  6. While the cookie base is baking, prepare the salted caramel. In a medium saucepan over medium heat, melt the sugar, stirring constantly until it turns a deep amber color.
  7. Remove from heat and carefully whisk in the butter until melted, then slowly add the heavy cream, stirring until smooth. Stir in the sea salt.
  8. Once the cookie base is done, remove it from the oven and let it cool for 10 minutes before pouring the salted caramel over the top, spreading it evenly.
  9. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  10. Drizzle the melted chocolate over the caramel layer and let the bars cool completely before cutting into squares.
