These Salted Caramel Chocolate Sugar Cookie Bars are a decadent treat that combines the rich, buttery flavor of sugar cookies with a luscious layer of gooey salted caramel and a drizzle of dark chocolate. Each bite offers a delightful contrast of textures, from the soft, chewy cookie base to the smooth, velvety caramel topping, finished with a hint of sea salt that elevates the sweetness.
Ingredients
Scale
- For the Cookie Base:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- For the Salted Caramel:
- 1 cup granulated sugar
- 6 tablespoons unsalted butter
- ½ cup heavy cream
- 1 teaspoon sea salt
- For the Chocolate Drizzle:
- ½ cup dark chocolate chips
- 1 teaspoon coconut oil
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Spread the cookie dough evenly in the prepared baking pan and bake for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
- While the cookie base is baking, prepare the salted caramel. In a medium saucepan over medium heat, melt the sugar, stirring constantly until it turns a deep amber color.
- Remove from heat and carefully whisk in the butter until melted, then slowly add the heavy cream, stirring until smooth. Stir in the sea salt.
- Once the cookie base is done, remove it from the oven and let it cool for 10 minutes before pouring the salted caramel over the top, spreading it evenly.
- In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- Drizzle the melted chocolate over the caramel layer and let the bars cool completely before cutting into squares.
Notes
- These bars can be made ahead of time and stored in an airtight container for up to 5 days.
- For longer storage, freeze the bars for up to 3 months. Thaw in the refrigerator before serving.
- You can substitute the dark chocolate with milk chocolate or white chocolate for a different flavor profile.
