Ruth’s Chris Creamed Corn Au Gratin is a decadent side dish that combines the sweetness of fresh corn with a rich, creamy sauce, topped with a golden, crispy cheese crust. Each bite offers a delightful contrast of textures, from the smooth, velvety creaminess to the satisfying crunch of the baked topping, making it an irresistible addition to any meal.

Ingredients

  • Corn: 4 cups fresh corn kernels (or 2 cans of sweet corn, drained)
  • Butter: 4 tablespoons unsalted butter
  • Flour: 1/4 cup all-purpose flour
  • Milk: 2 cups whole milk
  • Heavy Cream: 1 cup heavy cream
  • Cheddar Cheese: 1 cup shredded sharp cheddar cheese
  • Parmesan Cheese: 1/2 cup grated Parmesan cheese
  • Seasoning: 1 teaspoon salt, 1/2 teaspoon black pepper, 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes until it forms a roux.
  3. Gradually pour in the milk and heavy cream, whisking until the mixture thickens and bubbles, about 5-7 minutes.
  4. Stir in the corn, cheddar cheese, Parmesan cheese, salt, pepper, and cayenne pepper until well combined.
  5. Transfer the mixture to a greased 9×13 inch baking dish.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
  7. Let it cool for 5 minutes before serving to allow the dish to set slightly.
