Ingredients

  • 2 cups of mixed vegetables (bell peppers, zucchini, carrots)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup tahini
  • 1/4 cup water
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Chop the mixed vegetables into bite-sized pieces.
  3. In a bowl, toss the vegetables with olive oil, salt, and black pepper.
  4. Spread the vegetables on a baking sheet in a single layer.
  5. Roast in the oven for 20-25 minutes, or until tender and slightly caramelized.
  6. While the vegetables are roasting, prepare the green tahini sauce by whisking together tahini, water, lemon juice, garlic, and parsley in a bowl until smooth.
  7. Once the vegetables are done, remove them from the oven and let them cool slightly.
  8. Serve the roasted vegetables in bowls and drizzle with the green tahini sauce.
