Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup unsalted butter, softened
  • 2 tablespoons honey
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the sweet potatoes, then cut them into cubes.
  3. In a large bowl, toss the sweet potato cubes with olive oil, salt, and black pepper.
  4. Spread the sweet potatoes in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until tender and golden brown, stirring halfway through.
  6. While the sweet potatoes are roasting, prepare the honey butter by mixing the softened butter, honey, and cinnamon in a small bowl.
  7. Once the sweet potatoes are done, remove them from the oven and drizzle the honey butter over the top.
  8. Toss to coat and serve warm.
