- 4 medium sweet potatoes
- 2 tablespoons olive oil

- 1 teaspoon cinnamon (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and peel the sweet potatoes, then cut them into cubes.
- In a large bowl, toss the sweet potato cubes with olive oil, salt, and black pepper.
- Spread the sweet potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until tender and golden brown, stirring halfway through.
- While the sweet potatoes are roasting, prepare the honey butter by mixing the softened butter, honey, and cinnamon in a small bowl.
- Once the sweet potatoes are done, remove them from the oven and drizzle the honey butter over the top.
- Toss to coat and serve warm.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the sweet potatoes before roasting.
