These Rice Krispie Easter Eggs are a delightful combination of crispy texture and creamy chocolate flavor. Each bite offers a satisfying crunch, followed by the rich sweetness of chocolate that melts in your mouth, making them a perfect treat for the holiday season.

Ingredients

Scale
  • 4 cups Rice Krispies
  • 3 tablespoons unsalted butter
  • 1 package (10 oz) marshmallows
  • 1 teaspoon vanilla extract
  • 2 cups chocolate chips (milk or dark)
  • 1 tablespoon vegetable oil
  • Colorful sprinkles (for decoration)

Instructions

  1. In a large saucepan, melt the butter over low heat.
  2. Add the marshmallows and stir until completely melted and smooth.
  3. Remove from heat and stir in the vanilla extract.
  4. Add the Rice Krispies and mix until well coated.
  5. Let the mixture cool slightly, then shape into egg shapes using your hands (about 2-3 inches long).
  6. Place the formed eggs on a parchment-lined baking sheet and refrigerate for 30 minutes to set.
  7. In a microwave-safe bowl, melt the chocolate chips with the vegetable oil in 30-second intervals, stirring until smooth.
  8. Dip each Rice Krispie egg into the melted chocolate, allowing excess to drip off, then place back on the baking sheet and sprinkle with colorful sprinkles.
  9. Let the chocolate set at room temperature or refrigerate for 15 minutes.

Notes

  • Make-ahead: These eggs can be made up to 3 days in advance and stored in an airtight container.
  • Storage: Keep in a cool, dry place; avoid refrigeration to prevent the chocolate from becoming dull.
  • Substitutions: Use white chocolate or yogurt-covered chocolate for a different flavor profile.
