- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 cup heavy whipping cream
- 1 cup fresh raspberries
- 1 tsp vanilla extract
Instructions
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture into the bottom of a lined muffin tin to form the crust.
- In another bowl, beat the cream cheese and powdered sugar until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- Add vanilla extract and fresh raspberries, folding gently to combine.
- Fill each muffin cup with the cheesecake mixture and smooth the tops.
- Refrigerate for at least 4 hours or until set.
- Remove from the muffin tin and serve chilled.
Notes
- For a sweeter taste, adjust the sugar according to your preference.
- These bites can be topped with additional raspberries or a raspberry sauce.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
