Delicious and easy-to-make Raspberry No Bake Cheesecake Bites that are perfect for any occasion.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 cup fresh raspberries
  • 1 tsp vanilla extract

Instructions

  1. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  2. Press the mixture into the bottom of a lined muffin tin to form the crust.
  3. In another bowl, beat the cream cheese and powdered sugar until smooth.
  4. In a separate bowl, whip the heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture.
  6. Add vanilla extract and fresh raspberries, folding gently to combine.
  7. Fill each muffin cup with the cheesecake mixture and smooth the tops.
  8. Refrigerate for at least 4 hours or until set.
  9. Remove from the muffin tin and serve chilled.

  • For a sweeter taste, adjust the sugar according to your preference.
  • These bites can be topped with additional raspberries or a raspberry sauce.
